Using PDF Gold, can I take an exisiting PDF form and convert it to an editable pdf file that I can fill in the fields with text and then save the changes as a pdf file?

Yes, you can use PDF Gold to open any PDF files -- including PDF form, and convert it to an editable PDF file by inserting dynamic form fields using the form tools. You may then fill in the fields and then save as pdf file.
